SO DELICIOUS!! It is a must-try! If you love eggs. I do recommend using 2 eggs instead of 1. If you are not an egg lover simply omit the eggs altogether and it's still delicious!

  • 1 Bok Choy (Pak Choi) cut up/ shreded
  • 1 Large onion sliced or chopped
  • 2 Eggs, whisked
  • 1 tbsp Ginger, minced
  • 1/3 cup Shredded carrots
  • 2 Cloves garlic clove, minced
  • 1 cup Plemento pepper chopped
  • 1/2 tsp Salt
  • 1/2 tsp Pepper (to taste, for eggs)
  • 1 cup Bell peppers
  • 1/2 tsp Parsaly
  • 2 tbsp Grape seed oil, or Coconut oil


  • Heat oil in a skillet or pot over medium heat. Add the onion, carrot, ginger and garlic and cook them for 1-2 minutes, until softened.
  • Add cut up/ shredded Bok Choy (Pak Choi) and stir fry until they start to soften. Add other seasoning and salt at this time. Cover with lid and allow to simmer on low heat for about 2 -5 minutes.
  • Pour egg mixture over the bok choy and stir fry quickly. Mix them with the vegetables and continue cooking them for 2 more minutes. Half a minute before you finish, sprinkle some parsley over the entire thing and mix well.
  • Stir and turn off the heat. Serve with a touch of chili flakes on top if you desire
